Winner, Gourmand World Cookbook Awards. Best Local Cuisine cookbook in the United States. Everyone on the the Island of Martha's Vineyard off the coast of Massachusetts eventually ends up at Morning Glory Farm - celebrities, Islanders, summer visitors, foodies. Buying fresh, locally grown and prepared foods from Morning Glory is a rite of passage. Here, rich in detail and lush with the photographs of Alison Shaw, is the story of how the farm came to exist, the family that makes it happen, and the food that excites us all. The 70 recipes include favorites from both the farm stand and some well-known Island chefs. The Morning Glory Farm story is a romantic one: A young husband and wife hailing from different ends of Martha s Vineyard, with different backgrounds and different expectations in life, carve a few acres out of woodlands and plant what turns out to be a crop of wormy corn. Thirty years later, the worms are gone, and the couple plant, cultivate, harvest, and sell dozens of fruits and vegetables, prepared dishes and baked goods from a rustic farm stand that is the epicenter of fine, locally grown foods on the Vineyard. They supply restaurants with their produce restaurants that then brag about using Morning Glory products and they literally have people waiting in lines to buy just-picked corn and just-baked pies. And they do this with the help of a large and loyal crew and two sons who work alongside them planting and harvesting by hand on this most traditional of farms. It is a lesson in sustainable farming that is not to be missed. This book tells the story of those thirty years, and gives you recipes of the food they offer for sale, along with Jim and Debbie Athearn s own family recipes and recipes from some of the Island s favorite chefs.

Wine is one of the most celebrated and appreciated commodities around the world. Wine writers and scientists tell us much about varieties of wines, winegrowing estates, the commercial value and the biochemistry of wine, but seldom address the cultural, social, and historical conditions through which wine is produced and represented. This path-breaking collection of essays by leading anthropologists looks not only at the product but also beyond this to disclose important social and cultural issues that inform the production and consumption of wine. The authors show that wine offers a window onto a variety of cultural, social, political and economic issues throughout the world. The global scope of these essays demonstrates the ways in which wine changes as an object of study, commodity and symbol in different geographical and cultural contexts. This book is unique in covering the latest ethnography, theoretical and ethnohistorical research on wine throughout the globe. Four central themes emerge in this collection: terroir; power and place; commodification and politics; and technology and nature. The essays in each section offer broad frameworks for looking at current research with wine at the core.

Long before anyone on this side of the Atlantic was devoted to eating seasonally and locally, the French were doing precisely that, just as they had been for centuries. Although the high-end haute cuisine of Paris exported itself far and wide many decades ago, the varied regional cooking styles of France continue to reveal themselves to the world and dazzle those fortunate enough to experience them firsthand. Williams-Sonoma's Essentials of French Cooking takes you on a meandering food lover's tour of France, from the windswept coastline of Brittany, where the lamb tastes of the salty fields on which it grazes, southward through Gascony, with its bracing Armagnac and rib-sticking cassoulet, to the delicious fish stews of Marseilles and the Mediterranean, and back up through Burgundy, where the wine flows from some of the world's greatest vineyards and the local Dijon mustard makes a perfect sauce for the local rabbit. In these pages you'll also explore the fascinating intersections of culture and gastronomy in Alsace, where potatoes, cabbage, and beer lend a Germanic heft to the traditional menu; sunny Provence, where dishes made with tomatoes, garlic, olives, and basil link its cooking to that of neighboring Italy; and the Basque country, where Spanish flavors and Moorish spices like saffron and cumin have seeped over the Pyrenees. In addition to presenting a wide range of traditional, regional main dishes to build meals around, this collection of more than 140 carefully selected recipes covers a full range of courses and techniques, from silky baked farm-fresh eggs to brilliantly simple preparations for every season's vegetables through the most luxurious chocolate creams and satisfying rustic fruit tarts. And while terroir plays an undeniable role in this cuisine, true French cooking is comfort food for family and friends, which translates everywhere. A comprehensive glossary and a section on basic stocks and sauces help you fill your pantry with the authentic elements and bring one of the world's most admired cuisines home to your table.

From the author of the acclaimed Angels" Visitscomes an inside look at how a handful of ingenious winemakers has transformed-and been transformed by-the California wine industry over the past four decades. In the 1970s, a group of idealistic baby boomers was attracted to the seemingly romantic world of winemaking. Over the course of nearly forty years, however-as competition from abroad increased, wine eclipsed beer and spirits as American adults" beverage of choice, critics came to control the marketplace, and corporatization took over the industry-these young aesthetes would learn that wine is an unforgiving business. They would have to be clever to survive in an increasingly cutthroat atmosphere, and no one was more innovative than Randall Grahm of Bonny Doon Vineyard-the court jester and bleeding conscience of California wine, its most original and amusing figure. But Grahm is only one of the restless visionaries who, having chosen wine as the vehicle through which to fulfill their dreams, ended up changing the rules of the industry by adapting to its demands. From high technology to hardball entrepreneurship, from handicapping scores to holistic farming, each vintner operates by his or her own definition of an ideal wine. In this lively, sweeping account that spans the early seventies to the present day, David Darlington employs a sharp journalistic eye to profile a group of wine pioneers. A tale of vision and disillusion, brinksmanship and pragmatism, nature and business, politics and culture, An Ideal Wineis a fascinating look at an ever-evolving industry that reflects the values of our society and our civilization.

Do you know what's in your wine? Wine-making has become ever-more unnatural, from the use of blanket crop-spraying in vineyards, to the over-use of sulphites, but finally someone is doing something about it. Isabelle Legeron MW, otherwise known as "That Crazy French Woman", is leading the campaign for natural wine wine made as nature intended. There is no official description of natural wine, but a rough definition is that it is made from grapes that are farmed organically or biodynamically and harvested manually, and that the wine should ideally be made without adding or removing anything during the vinification process. It is basically good old-fashioned grape juice fermented into wine, just as nature intended. That Crazy French Woman is a crusader for the natural wine movement: she has her own show on the Travel Channel, organises a hugely successful annual natural wine festival (RAW) in London, and acts as adviser to several leading restaurants. Just as the craft beer movement has taken off across the globe, the demand for natural wine is growing and will continue to do so.

As a young child in Naples, Italy, Sergio Esposito sat at his kitchen table observing the daily ritual of his large, loud family bonding over fresh local dishes and simple country wines. While devouring the rich bufala mozzarella, still sopping with milk and salt, and the platters of fresh prosciutto, sliced so thin he could see through it, he absorbed the profound relationship of food, wine, and family in Italian culture. Growing up in Albany, New York, after emigrating there with his family, he always sat next to his uncle Aldo and sipped from his wineglass during their customary hours-long extended family feasts. Thus, from a very early age, Esposito came to associate wine with the warmth of family, the tastes of his mother's cooking-and, above all, memories of his former life in Italy. When he was in his twenties, he headed for New York and undertook a career in wine, beginning a journey that would culminate in his founding of Italian Wine Merchants, now the leading Italian wine source in America. His career offered him the opportunity to make frequent trips back to Italy to find wine for his clients, to learn the traditions of Italian winemaking, and, in so doing, to rediscover the Italian way of life he'd left behind. Passion on the Vine is Esposito's intimate and evocative memoir of his colorful family life in Italy, his abrupt transition to life in America, and of his travels into the heart of Italy-its wine country-and the lives of those who inhabit it. The result is a remarkably engaging and entertaining wine/travel narrative replete with vivid portraits of seductive places-the world-famous cellars of Piedmont, the sweeping estates of Tuscany, the lush fields of Campania, the chilly hills of Friuli, the windy beaches of Le Marche; and of memorable people, diverse and vibrant wine artisans-from a disco-dancing vintner who bases his farming on the rhythm of the moon to an obsessive prince who destroys his vineyards before his death so that his grapes will neve

But she has more to worry about than buried secrets.A clash between her charming new farm manager and her winemaker, Quinn Santori, tests her complicated romantic and professional feelings for Quinn, fueling the winery's combustible atmosphere. Meanwhile eerie ghost stories make her think twice about allowing Civil War reenactors to use a field near the grave site-until the spirits of her own family's past converge for a most unexpected outcome.

Author and entomologist Clifford P. Ohmart brings reason and clarity to the politically loaded and amorphously defined world of sustainable viticulture with a work that is both potent treatise and practical manual. View from the Vineyard begins with an examination of the modern origins of the various "green" movements, explains what sustainable farming actually is, powerfully argues for its industry-wide adoption, and outlines the costs of agribusiness as usual. Next, it provides the farmer with a realistic and achievable path to a sustainable vineyard by describing: The challenges of practicing sustainable winegrowing. Where Integrated Pest Management fits in. How organic and sustainable farming are related. A holistic vision for the farm. How to identify and define your farm's resources. Methods for developing sustainable goals. How to create a plan to achieve your holistic vision. Ecosystem management and sensitive species. How to treat the vineyard as habitat. The book concludes with a self-assessment guide in which growers can easily track their progress through these transitional periods.

Burgundy has a far stronger hold over the imagination and passions of wine lovers than the relatively modest number of bottles it produces. Over the centuries, hundreds of plots of vineyard land were demarcated, farmed, and individually named. The monks who did this work noticed that each vineyard had a slightly different character, and that this difference was consistently expressed each year in the wine it produced. Today we call this phenomenon terroir, and in Burgundy it finds its fullest expression through the region's signature varieties, Chardonnay and Pinot Noir. This sumptuously illustrated and beautifully produced guide, complete with maps and more than 150 full-color photographs, leads readers on a journey through the well-worn vineyard paths and into the cellars of the Côte d'Or. Bill Nanson's informative narrative describes the region's vineyards and vintages, as well as the cultural, historical, and personal realities involved in their translation into wine.

'Delicious.' I licked my lips. The wine filled me with joy. A picture of a vineyard drenched in sunlight formed in my mind. Sean drew me rudely back to the lounge of our semi-d. 'How can they be in liquidation if they make wine this good?' When Caro and Sean find the perfect ten-hectare vineyard in Saussignac, it seems their dreams of becoming wine-makers in the south of France are about to come true. But they arrive in France with their young family (a toddler and a newborn) to be faced with a dilapidated eighteenth-century farmhouse and an enterprise that may never, ever make them a living. Undeterred by mouse infestations, a leaking roof, treacherous hordes of insects, visits from the local farm 'police' and a nasty accident with an agricultural trimmer, Caro and Sean set about transforming their 'beyond eccentric' winery into a successful business as they embark on the biggest adventure of their lives - learning to make wine from the roots up.

It's never too late, as the vineyards of 103 year old Baron Bruemmer bear out. The Baron was born in the Baltic Russian province of Livonia, settled later in Zurich, and made his money in banking. In 1962 he moved to Portugal where he pursued his love of Arab horses and created a stud farm. Only at 96 did he wake up from an operation and decide to plant a vineyard. Now there are three! All are cooled by the Atlantic Ocean and morning mists and so produce wines with a delicious tang reminiscent of the sea. This one is pure Sauvignon, aged on its lees to lend it weight, and has brisk melon and asparagus notes and a stony freshness. Created by Jorge Rosa Santos, this white is very appetising - perfect on its own, or with salads or fish dishes.
