The Feudo di Santa Tresa estate has around 50 hectares of vineyards based on a rich, red soil which has ideal characteristics: a 40-100 centimetre surface layer of light red sandy loam on a well-drained limestone base, which helps to guarantee a constant supply of water. The volcanic soil is highly fertile and the harsh sun is tempered by the cooling sea breezes, making the quality of the vines and grapes is so exceptional that minimal intervention is the order of the day and organic production the natural result. Grapes are destemmed and then softly pressed. Before pressing, in order to obtain optimum extraction of the aromas, the grapes are left in contact with the skins for about 24 hours at about 10 degrees Celcius. Following the addition of selected yeasts, fermentation takes place in stainless steel tanks for about 10 to 15 days at a controlled temperature of 18 to 20 degrees C. The final step is to leave the wine on its fine lees for about 3 or 4 months before bottling.

The history of Rioja Vega goes back to 1882 when Don Felipe Ugalde established a Bodega bearing his name in Haro. In 1948, the Ugalde family became related by marriage to the Muerza, another winemaking family of the neighbourhood. Both Bodegas joined forces establishing the production in San Adrián under the name of Bodegas Muerza. Many years later in 1983, the winery was acquired by Group Príncipe de Viana who have completely modernised the winery and upgraded the vineyards. Today, they tend 60 hectares and have storage for two million bottles. Made from Tempranillo and Mazuelo. The wine is oaked during 14 months in small barrels. Abandoning Paris and the world of finance, Arnaud de Butler made his home among the vineyards of Bordeaux. After learning the viticultural ropes, he took over from his father at Château Crabitey, where the wines of Château Trebiac come from. Situated 35km south of Bordeaux, the 70 acres of the château is one of the flagship estates of the Graves renaissance. In 1985, they called on Jean-Ralph de Butler, who began the task of bringing their work up to professional standards, getting the vineyard back to peak condition, modernising the production facilities, planting new plots of vines and building a new winery. Since 1999 the estate has been skilfully run by Arnaud. Building on the work that had already been achieved. He focuses a key part of his attention on vineyard practices: ploughing, shoot-thinning, green harvesting, leaf plucking etc. A new winery was built in 2001.

Declaring a vintage is a weighty decision for port producers, as the company's reputation is largely determined by the quality and style of its vintage port (even though vintage declarations amount to only 1-3% of the total production in any year). Therefore, when Cockburn's declares a wine worthy of a vintage designation, the wine must be outstanding. Cockburn's has historically been more conservative than other port houses in declaring a vintage, choosing to declare only those years that best suit its elegant, less sweet style. Before declaring, Cockburn's blenders taste, categorize and identify those wines that might ultimately become a vintage blend. Only after this rigorous two-year selection process is a final decision made.
