Situated in western Romania just to the east of the town of Timisoara, Cramele Recas is a very impressive new winery on an old site. In the last 10 years, both the vineyard and winery have been completely, and exhaustively, modernised in order to be able to fully control the production process using the latest methods. The winery has been fully fitted out with stainless steel, automatic temperature controlled tanks for fermenting and storing the wine. 100 % estate-grown handpicked fruit from the Dealul Tiganului vineyard was destemmed and lightly crushed, before being chilled to 8 degrees C for 8 hours maceration. 20% of the juice in each tank was drained for rosé, before being decanted for 24 hours and inoculated with selected yeasts for fermentation in stainless steel tanks for 4 weeks at 12 C. Fermentation was stopped by cooling to zero degrees C, with a residual hint of sugars 6 grms/l) to give a soft, rounded finish. Made from 55% Feteasca Neagra and 45% Cabernet Sauvignon.
