Due to the perishable nature of this artisanal product, returns cannot be accepted. This Purveyor's Story: Joe and Mary Eichten never dreamed that they would be international cheese makers. In 1975, Joe was running the family dairy farm while Mary was raising their 10 children. That year, they decided to turn their dairy into a farmstead cheese plant as part of the University of Minnesota's pilot program. Producing gourmet European-style cheeses, Eichten's Hidden Acres began raising bison on the farm to offer an all-natural, healthy meat along with their artisan cheese varieties. In 2006, the second generation took over the family business, later joined by the third generation, extending their menu to include a variety of all-natural, rGBH-free cheeses made fresh right on the farm.
