White Wine by Bravium from Central Coast, California. Rosella's Vineyard is one of the most renowned plantings in the Santa Lucia Highlands. It is owned and farmed by Gary and Rosella Franscioni. Originally planted in 1996, Rosella's has ten acres of Chardonnay, split between Dijon clones 76 and 96. Two acres are allocated to Bravium. The estate's close proximity to Monterey Bay makes for a very cool, Region I climate. The growing season here is one of the longest in California, allowing for full flavor development on the vine. In the winery, whole cluster Chardonnay was gently pressed and fermented in a combination of French and Hungarian oak barrels - most of which had been seasoned for four years. Assemblage was accomplished in May with bottling two months later in July. The wine was not fined and completed a full malolactic fermentation, allowing it to be bottled unfiltered, retaining all of the wine's inherent character and complexity. The DLD Syrah is an homage to both the Dupont and Liegeois sides of her family. This wine is dedicated to her grand-father Marcel Dupont, Chevalier du Tastevin and bon-vivant, lover of good food and great wines. Red Wine by Red Car from Sonoma County, California. This Pinot Noir is a wine of wonderful paradox as it combines concentration of fruit and spice with freshness on the palate. It has quickly risen up the ranks to become a house favorite with the Red Car team. The tannins are more pronounced than their other Pinot Noirs, attributable to the intense afternoon winds in the vineyard (Zephyr was the Greek god of the west wind). Yet, the mouthfeel and body of the wine remains delicate and silky.

The way we make our artisanal slow-cured salame is based on original 160-year-old family recipes that were handed down over four generations to our founder, oliviero olli colmignoli. our salame is made with pork from humanely raised heritage-breed pigs on family-owned sustainable farms. Good salumi is directly affected by the quality of the pork, and we go to great lengths to obtain the best pigs available in the USA. The pigs are humanely raised and are fed all-vegetarian feeds (antibiotic-free and never fed animal by-products). Our salame is slow-cured. We use the flavorful picnic cut (part of the shoulder). We carefully monitor water activity and ph levels while curing at very low temperatures (never exceeding 72* f) for the most gentle curing process possible, preserving the superior quality of our pork.
